My dad isn't much of a cake person so when his birthday comes a round I try to make something outside the box. His all time favorite is coconut cream pie. My mother use to make a baked one for generations but I decided to make a no bake pie. It was a huge hit and looked like something you would see in a magazine.
2 pkg. JELL-O Vanilla Flavor Instant Pudding
2 cups cold milk
2 cups thawed Cool Whip, divided
1 cup Coconut flakes, divided
1 ready-to-use graham cracker crumb crust (6 oz.)
Beat pudding mixes and milk in large bowl with whisk 2 min. Stir in 1 cup cool whip and 3/4 cup coconut; pour into crust. Meanwhile toast remaining coconut, if desired.
Top with remaining COOL WHIP and coconut
