Mama's Not So White Chicken Chili

Today i decided to cook up some of my not so white chicken chili. And its mmm mmm good. I love the change from regular chili on occasion. Chili is just one of those things that's so good no matter what time of year or how you make it. Its a very comforting food and it never last in this house.

I'm gonna school you in how to make mama's not so white chicken chili.
First off mama doesn't measure but since your new at this ill try to give you a guide.

 1 small onion, diced
 1 can diced green chile's
 3 spoonfuls of minced garlic or to taste

 1 tablespoon vegetable oil

 4 cups chicken broth

 3 (15.5 ounce) cans great northern beans,

 2 tablespoons minced fresh cilantro
 1 lime juiced

 1 1/2 teaspoon ground cumin
 1 1/2 teaspoon ground white pepper
 paprika to taste
 red cayenne pepper to taste
 chili powder

 2-4 tablespoons cornstarch

 1/4 cup cold water

 2-3 cups cubed, cooked chicken

 
  1. Cube up your chicken breast or tenders in to small bite size pieces.
  2. Dice a medium onion
  3. Next get some oil hot in a pan (about a tablespoon or so)
  4. Add in your chicken and cook til about 1/2 done
  5. Next add in about 3 regular kitchen spoons of minced garlic
  6. Now add the onion, white pepper, cumin, paprika, cayenne pepper
  7. Cook til done. Simmer with about a 1/2 cup of chicken broth for about 10 min to let the flavors blend.
  8. In a stock pot add your 3 cans of great northern beans,chilies, lime juice, cilantro, remaining broth, about 1tsp of chicken bullion granules.
  9. Bring that all to a boil and reduce to simmer, cover about 10 min.
  10. In the meantime combine your cornstarch and water til smooth.
  11. Pour the into your chili, add chicken mixture and stir til thickened.
 

Now you can top it with shredded cheese, crushed tortilla chips, sour cream or whatever your heart desires. Sit back and enjoy in front of a nice cozy fire or a good movie, or serve it for a family or tailgate event. Enjoy...
